Coconut Chia Pudding
INGREDIENTS:
1 ½ cups coconut milk (with the coconut cream if you have it)
½ cup chia seeds
2 tbs. maple syrup (to taste)
2 tsp. vanilla extract
DIRECTIONS:
Put all ingredients in mason jar, screw on lid and shake to mix. Let sit overnight or at least 6 hours in fridge.
And it’s ready to eat!! That simple!
I added blueberries and mango and toasted walnuts.
Any additional nut, seed, fruit, or shredded coconut toppings would be delicious!
