DOUBLE CHOCOLATE CHIP COOKIES

INGREDIENTS:
3 cups cooked chickpeas- rinsed and drained
1 cup organic peanut butter
1 cup maple syrup
5 tbs. unsweetened cocoa powder
5 tsp. vanilla
1 tbs. shredded coconut
1 tsp. baking soda
2 dashes of cinnamon
pinch of salt
2 cups chocolate chips
DIRECTIONS:
Preheat oven to 350 degrees. Mix all ingredients in a blender until smooth. Mix in chocolate chips. Make into small scoops onto baking dish, cook for 23 minutes or until you can stick a fork in the middle of the cookie and it comes out clean. Take out of oven and cool. ENJOY!
**Since we always end up making a double batch, this is the double batch amounts. Just halve amounts for one cookie's sheet worth of cookies.

- Maple Syrup- has high antioxidants along with other natural sweeteners like molasses and honey. Maple syrup contains up to 24 different antioxidants as phenolic compounds, which reduce free radical damage that can cause inflammation and attribute to chronic disease. The polyphenol antioxidants also reduce inflammation and helps disease such as heart disease, arthritis, and inflammatory bowl disease. It also reduces oxidative stress! Oxidative stress makes us age quicker and lowers our immune system. Maple syrup also has a low glycemic index, so it is metabolized more slowly in the liver and thus avoid the sugar high and sugar crash from refined sugars and refined carbohydrates.
